Idli is one of the popular breakfast recipes. Traditionally rice and urad dal are soaked for 4 – 5 hours, then ground to thick batter. The batter then is fermented for 8-12 hours. It is a lengthy process but followed by many normally.  But there are many instant versions of Idlis like Rava Idli, Poha Idli, Oats Idli and so on. These idli batter doesn’t need fermentation, Idlis will become soft and fluffy by adding baking soda or Eno fruit salt to the batter. 


Moong Dal Idli Recipe Without Fermentation | Moong Dal Recipe in English | Yellow Moong Dal Idli Recipe is one of the instant idli recipes. It is an easy and healthy alternative breakfast or idli recipe made with yellow moong lentil. It is one of the easy idli recipes as it is made with just moong dal batter without the urad dal and not even need fermentation. The dish does contain all the necessary spices in it but can be served with green chutney and sambar. 


Moong Dal is rich in protein and is very healthy, it is a good and safe lentil for babies too. Moong Dal is soaked just for two hours and then, ground to thick batter without adding water. Veggies are sautéed in tempering and added to the batter. Eno fruit salt is added just before the batter is poured into Idli plates. And steam cooked for 12 to 15 mins to get soft and puffy Moong Dal Idli. I have used the yellow split moong dal but we can also use whole or split green moong.

Ingredients

  1. Moong Dal: One bowl
  2. Curds: One bowl
  3. Carrot: One
  4. Green Chilis: 3-4
  5. Ginger: One inch
  6. Oil: 3 tea spoons
  7. Jeera: Half tea spoon
  8. Mustard: Half tea spoon
  9. Hing: One pinch
  10. Turmeric: Half tea spoon
  11. Kadi patta/curry leaves: One string
  12. Coriander leaves: half bowl
  13. Salt: as per taste
  14. Eno Fruit Salt: Half tea spoon

How to make Moong Dal Idli Recipe Without Fermentation | Moong Dal Recipe in English | Yellow Moong Dal Idli Recipe


Step 1

Wash one bowl of moong dal or yellow lentil in water. Then soak for two hours. Drain the water form-soaked dal. Grind to make a soft batter without adding water at all.


Step 2

Add one bowl of curds to the batter. Mix well and keep aside for five minutes. You can avoid adding curds if you doesn’t want to add sour taste to Idlis. 


Step 3

In a pan add three tea spoon oil. Once oil is hot; add jeera, mustard, hing, turmeric and kadi patta. Splutter them. Then add grated carrot, ginger and finely chopped green chilis. Saute them for two minutes.


Step 4

Add the vegetable mix to the idli batter and mix well. Add salt. If you are making Idlis in two batches then take half of the batter in a bowl and add Eno fruit salt and mix slowly.


Step 5 

Grease the idli moulds or plates. Pour the batter and steam for 10-15 minutes. Serve hot with spicy chutney and sambar. Repeat the process with remaining batter.

Wash moong dal in water twice. Then soak it in water for two hours.

After two hours drain the water from soaked moong dal.

Then transfer moong dal to mixer jar and grind without adding water.

Transfer the batter to a large bowl.

Add one bowl curds and mix well.

Meanwhile chop green chilis, grate carrot and ginger.

In a pan add oil and tempering ingredients. Then add veggies and saute them.

Add this mixture to the idli batter and mix well

Then add salt and Eno fruit salt; mix gently.

Grease the idli moulds or plates and pour the batter.

Steam for 12-15 minutes and serve hot with spicy chutney and samabar.

Tips

I have used only carrot to make idlis, you can add veggies of your choice.

I have used curds to give sourness to the batter, you can add lemon juice for the same effect.

I have used Eno fruit salt as fermenting agent, you can add baking soda for the same.

Eno must be added just before steaming idlis. Do not rest the batter after adding Eno. If you want to store the batter then refrigerate it immediately after grinding.
